Typically there is no chaptalization (The process of adding sugar to the must before fermentation if the grapes have low sugar content so as to give the wine balance and higher alcohol content.) This procedure is legal (with certain restrictions) in France and Germany, but illegal in California and Italy, although addition of grape concentrate is allowed. Chaptalization is legal in other parts of the United States such as Oregon and New York.
